The humble adobo, reinvented
It was quite a gastronomical experience — I wanted to try everything! Despite my huge appetite, there were simply too many dishes to choose from. Interestingly the one dish that stood out and made my day was none other than the humble Adobo. For the uninitiated, adobo is originally a Spanish dish adopted by the Philippines during colonization.
Filipino adobo has since become a standard — every household has its own variety of adobo. Foreigners visiting the country must not leave without trying it at least once. There are many variations of adobo but the main ingredients would always include chicken or pork, soy sauce, vinegar, and pepper. The Marriott Cafe version had green chili (“siling haba” in Filipino), onions, bay leaves (“laurel”), coconut milk, and sugar. The combination of sweet, sour, salty, layered with the nutty flavor of coconut milk was a delight to the palate.
Seafood lovers’ paradise
The seafood spread in Marriott Cafe is also quite good. Sitting on top of ice are choice seafood which guests are free to gather for cooking. You can instruct the chef to cook your favorite seafood dish just the way you want it. The ingredients are fresh, which makes for a most flavorful dish. Their sweet and spicy prawns which was simply exquisite!
Desserts that look good and taste good!
The dessert spread in Marriott Cafe is not only huge, but beautiful to look at. It’s like being in an art gallery, except you can eat the little pieces of art. Just by looking at the desserts it is evident that a lot of time and effort was spent by Marriott Cafe’s pastry chefs on presentation.
The Ruby Tuesday ice cream is a must try. The unique blend of mocha and white chocolate is quite an experience that must not be missed.
Whatever your poison may be, you will surely find something in the wide selection of dishes to satisfy your palate.
What about the ambiance?
Marriott Cafe offers different seating areas that would suit any mood. An open area is available for those who like sunlight and a breath of fresh air. Small families and couples can cozy up in their couches, illuminated by dim lights. Big groups will find their spacious dining areas quite comfortable.
“Our chefs are always coming up with something new,” said Richard Saul, President of Marriott Hotel Philippines. Last July, Marriott Cafe brought chefs from Thailand for “Thai Kingdom Come”, a celebration of Thai cuisine.

“Christmas!” exclaimed Richard. “We will start celebrating Christmas as early as November 20,” he revealed excitedly. Now that is something we can surely look forward to.
